I don't know if it's already been adapted, but I would love and i mean LOVE to see ID_Entity or (Yureka) Turned into an anime.

Hmm...I would want "yotsuba" to be adapted..."goong" although there's a korean drama of it...I would like to see how the anime might be..."full house kiss" but then there's not many volumes out yet...
I definitely wanna see the Jinchuu Arc of Rurouni Kenshin animated ... and maybe Vagabond. I was imagining it would have a 'Shigurui" feel to it if ever its adapted.
I would like to see some more Beck, Hunter x Hunter, Berserk, and Nodame Cantabile animated. A more faithful adaptation of Yokohama Kaidashi Kikou could be epic but it seems hard to capture the magic in animated form. Hopefully we will see Yotsuba&!, Vinland Saga, and Vagabond some day. To be honest the only ones I could ever see actually happening are Yotsuba&!, and Hunter x Hunter is only a matter of time.

I would like to see jadou (by Kawahara Tsubasa and Oki Mamiya) adapted into an anime series the most right now. (Although the chances are very low... T.T)
The manga just isn't enough for me, I already ordered the first three volumes of the novel, but my Japanese isn't that great, so an anime series would just be great.
I reckon all of these could get quite interesting anime series if done correctly, although I've already heard rumours of a live-action Priest film, which could turn out amazing...
Well ..there are great Mangas that in my opinion would be good if they were animated!

Gunnm, most definately. I already know that they made an OVA, but it really was a minimal effort at a true adaptation. The full story is so great that it really must be told properly, especially before James Camerron butchers it.
